“Pasta con Pesto di Zucchine e Pomodori Secchi”
I think I’m going to make this recipe again and again, over and over. I just loved it. Very summery, very yummy and so-ooo easy to make. Really, one of the best ever and you can make the zucchini pesto sauce in 5 minutes, literally.

INGREDIENTS
for 2 people
- 180g of pasta
- 100g of grated zucchini
- 30g of grated parmesan cheese
- 40g of walnuts
- 6/8 pieces/slices of sundried tomatoes
- 125ml of extra virgin olive oil
- 1 pinch of salt
- 1 pinch of black pepper
METHOD
- Bring a pot of water to a boil and cook the pasta. Don’t forgert the salt in the water!(see box for cooking time)
- In the mean time take your electric chopper and put the shredded zucchini in it, add the parmesan cheese, walnuts, salt, pepper and olive oil.
- Activate your chopper and reduce all the ingredients to a “crunchy” creamy sauce.
- When the pasta is ready and drained, put it back into the sauncepan.
- Add the sauce and the sundried tomatoes, chopped with a knife
- Mix well and serve with some extra parmesan cheese flakes.
You can also grate some salted ricotta on top instead of parmesan cheese flakes, it will give extra flavour to a delicate but yummy dish.
