Pasta con Pesto di Zucchine e Pomodori Secchiin italiano

I think I’m going to make this recipe again and again, over and over. I just loved it. Very summery, very yummy and so-ooo easy to make. Really, one of the best ever and you can make the zucchini pesto sauce in 5 minutes, literally.

INGREDIENTS

for 2 people

  • 180g of pasta
  • 100g of grated zucchini
  • 30g of grated parmesan cheese
  • 40g of walnuts
  • 6/8 pieces/slices of sundried tomatoes
  • 125ml of extra virgin olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper

METHOD

  1. Bring a pot of water to a boil and cook the pasta. Don’t forgert the salt in the water!(see box for cooking time)
  2. In the mean time take your electric chopper and put the shredded zucchini in it, add the parmesan cheese, walnuts, salt, pepper and olive oil.
  3. Activate your chopper and reduce all the ingredients to a “crunchy” creamy sauce.
  4. When the pasta is ready and drained, put it back into the sauncepan.
  5. Add the sauce and the sundried tomatoes, chopped with a knife
  6. Mix well and serve with some extra parmesan cheese flakes.

 

You can also grate some salted ricotta on top instead of parmesan cheese flakes, it will give extra flavour to a delicate but yummy dish.
