PATATE AL FORNO CARAIBICHE, SPEZIATE CON VERDURE” > in italiano

I’ve lived in the Caribbean for 7 months thanks to my previous job. I hated it. Yes, I know it may sound strange, and crazy, but going there on vacation is a different story. You usually spend a couple of weeks there, enjoy the sun and relax.

I had to stay there, on a very small island and basically in my office all day. On top of this, like if this was not enough, I developed a strange allergy to *tropical plants*, yes, an allergy to tropical plants in the Caribbean. And my office was surrounded by an enormous garden filled with…yes, you guessed it, tropical plants.

So now you now why I hated it so much.

But there was something I really loved: food. Spicy food. How they use all nice and strong flavours. I once had these baked potatoes made for me by a lovely local Lady who invited me over for dinner, and since then I made them myself a few times.

Of course, none of us can really get hold of those specific spices, unless you live there, and even if you get the same spices (curry powder, sweet chilli etc) they just won’t taste the same, believe me. 

INGREDIENTS

For 2 people

  • 110g of zucchini, chopped and daced
  • 150g of champignons, sliced
  • 60g of cherry tomatoes, cut in half
  • 300g of potatoes, chopped into chunks
  • 4 tbs of cornmeal
  • 3 tbs of mixed spices such as sweet chilly, curry powder, pepper, thyme etc
  • 2 tbs of extra virgin olive oil
  • Salt, a pinch

METHOD

  1. Pre-heat oven at 180°.
  2. In a bowl grease the potatoes with the oil.
  3. Add the spices and the cornmeal.
  4. Mix well and coat the potatoes with the spices.
  5. Take a baking sheet and line it with parchment paper.
  6. Now lay the coated potatoes onto the baking sheet.
  7. Bake for 15 minute.
  8. Take the baking sheet of the oven and add the veggie.
  9. and the veggies on the baking sheet.
  10. Sprinkle with salt.
  11. Bake for 25 minutes.

 

I had my crunchy and spicy potatoes and veggies with fish, perfect dinner, it did remind me of that “lovely” island….. Well the Island was ok, spending so much time there was not!
