“Zuppa Turca con pomodoro e Salsiccia“
You may not believe it but I actually made this soup on a very hot day in June.
But that’s me, I don’t mind at all, I actually need a good hot soup even on summer, I’m so much into hot soups, they make me feel better 🙂 For instance I love my Chickpeas & Carrots soup with chilli croutons and I highly reccomend it to you!
This is my own version of a typical Turkey Soup. It is not the original recipe, it is my adaptation, hope you enjoy it.
It is very hearty, flavoured and definitely to be considered a main dish since it calls for sausages as well.

INGREDIENTS
for 2 people
- 200g of leeks, chopped
- 200g of carrots, diced/chopped
- 200g of courgetts, diced/chopped
- 200g of chopped tomatoes (canned)
- 140g of white rice
- 2 ts of finely chopped parsley
- 1 potatoes, pealed, diced/chopped
- 150g of sausages
- some olive oil
- salt & pepper
METHOD
- In a saucepan drizzle in the olive oil, 2 tablespoons, then when it is hot, add the chopped sausages.
- Cook them stirring every now and them.
- Set aside.
- Take a pot and pour about 4 glasses of water in it.
- Bring to a boil and put all the veggies in.
- Cook them for 15 minutes.
- Now add a glass of water and the chopped tomatoe sauce, the whole can.
- Add the rice and cook it based on the time specified on the box. (it varies)
- Water should steam out but the soup will remain rather runny. It is ok.
- When it is ready, add the pieces of cooked sausages and stir.
- Add salt and pepper.
- Serve hot and you can also add some chilli if you like it.
