These cookies are ideal for a yummy breakfast or a snack when you really crave for soving good but not too heavy or fatty. They are slightly crunchy on the outside, but very soft in the middle. I dunked mine into a nice hot coffee, delicious!
I used simple and healthy ingredients and they are very easy to make, you will not even need an electric mixer, just a whisker, but even a nice spoon will do the job!
INGREDIENTS
- 100gr oats
- 1 ½ ts of baking soda
- 1 ½ ts of baking powder
- 30ml of oil
- 2 whole eggs
- 1 egg yolk
- 90gr of flour
- 90ml of honey
- 80gr of carrots, grated
METHOD
- In alarge bowl, put all the dry ingredients, oatmeal, flour, baking soda, baking powder.
- Mix well.
- In another bowl, add egg and oil, mix well with a whisker.
- Add the egg mixture to the mixed dry ingredients.
- Combine all these ingredients nicely.
- Now it’s time to add the honey and the carrots.
- Combine all the ingredients and then divide the mixture in several small butches, just a couple of spoons each batch, on a baking try lined with parchment paper.
- Place the tray into the fridge for 1h.
- After 1h take the tray out of the fridhe and using your fingers, slightly press each portion of mixture to give it a more flatten look.
- Bake in a pre-heated oven for 15 minutes at 175°.
They are very easy to make as you can see, and you could also add some hazelnut grain, walnuts, or even coconut flakes.
