Gnocchi Mortadella, Pinoli & Porri
You know when you really need something good, very good, to eat but first of all you don wanna spend 2 hours cooking and secondly you had pizza at least 75 times over the past month?!
So what do you do? You improvise something and it turns out to be that very good thing you really needed. Just by mixing together a few ingredients you had at home already.
That’s why you then feel like you must share this recipe with everyone!
INGREDIENTS
for 2 people
- 280g of gnocchi
- 130g of bologna sausage
- 1 tbs of pinenuts
- 150g of sliced leeks
- 80g of ricotta cheese
- 3tbs of water
- salt and pepper
METHOD
- In a saucepan add a teaspoon of olive oil and cook the leeks untile they are soft and slighty brown.
- In a food processeror put the bologna sausage, pinenuts, water, ricotta cheese, salt and pepper
- Mix well until they are combined and similar to a creme
- Cook the gnocchi, they usually take 3 minutes to be ready no more
- Place the cooked gnocchi back into the saucepan after having drained them
- Add the leeks and the bologna sausage sauce
- Mix well but gently.
- Add more salt if you wish.
That’s it. Like almost all my recipe, very simple and very quick.
