ECLAIRS con CREMA AL CAFFEE & CIOCCOLATO”  in italiano

These are my super delicious Eclairs with a coffee filling and a thick chocolate coating. Coffee & Chocolate is a combination I personally like a lot, love indulging in a nice piece of dark chocolate dipped into hot coffee. That’s why I thought about making these Eclairs with coffee and chocolate, sweet and delicious combination!

INGREDIENTS

  • 240ml of water
  • 95g of butter
  • 15g of sugar
  • 1 pinch of salt
  • 150g of flour
  • 3 eggs
  • 1 egg white

Filling

  • 150g of mascarpone cheese
  • 200g of white chocolate
  • 1 tablespoon of instant coffee

Coating

  • 100g of cocoa powder
  • some water

METHOD

  1. In a saucepan, place the water, butter, sugar and salt.
  2. Bring to a boil over medium heat.
  3. Add the flour and stirr with a wooden spoon, untill all the ingredients are incorporated.
  4. Cook and stir for the next 4 minutes, the water should steam away. That’s totally fine.
  5. The mixture is ready when there will be a “film-looking” layer of micture at the bottom of the saucepan.
  6. Now place the mixture in the bowl of a standing mixer, use the paddle attachment, for 2 minutes.
  7. Let it cool.
  8. Now add 1 egg and mix again for 1 minute, then the second egg and the third. Mixing well.
  9. Add the egg white, until the mixture becomes smooth.
  10. Take a piping bag and fill it up with the mixture.
  11. Cut the tip of the piping bag so it has a 2cm opening
  12. Now line a large baking sheet with parchment paper
  13. Pipe your eclairs onto it, 8cm long.
  14. Bake in a pre-heated over for 30 mins (ish) untile golden
  15. Let them to cool
  16. Prepare the filling by melting the white chocolate

  1. Let it cool down a little then add the mascarpone cheese and mix well with a spatula.
  2. Put the instant coffee into a small cup, and pour one spoon of hot water on it.
  3. This will make some sort of “coffee paste” that you can now add to the cream.
  4. Mix well.
  5. Fill the Eclairs with this cream when they are at room temperature.
  6. Take a small bowl with the cocoa powder, add some water, warm, drop by drop and stirring very well untile you get a very thick chocolate “cream”
