“ECLAIRS con CREMA AL CAFFEE & CIOCCOLATO”
These are my super delicious Eclairs with a coffee filling and a thick chocolate coating. Coffee & Chocolate is a combination I personally like a lot, love indulging in a nice piece of dark chocolate dipped into hot coffee. That’s why I thought about making these Eclairs with coffee and chocolate, sweet and delicious combination!

INGREDIENTS
- 240ml of water
- 95g of butter
- 15g of sugar
- 1 pinch of salt
- 150g of flour
- 3 eggs
- 1 egg white
Filling
- 150g of mascarpone cheese
- 200g of white chocolate
- 1 tablespoon of instant coffee
Coating
- 100g of cocoa powder
- some water
METHOD
- In a saucepan, place the water, butter, sugar and salt.
- Bring to a boil over medium heat.
- Add the flour and stirr with a wooden spoon, untill all the ingredients are incorporated.
- Cook and stir for the next 4 minutes, the water should steam away. That’s totally fine.
- The mixture is ready when there will be a “film-looking” layer of micture at the bottom of the saucepan.
- Now place the mixture in the bowl of a standing mixer, use the paddle attachment, for 2 minutes.
- Let it cool.
- Now add 1 egg and mix again for 1 minute, then the second egg and the third. Mixing well.
- Add the egg white, until the mixture becomes smooth.
- Take a piping bag and fill it up with the mixture.
- Cut the tip of the piping bag so it has a 2cm opening
- Now line a large baking sheet with parchment paper
- Pipe your eclairs onto it, 8cm long.
- Bake in a pre-heated over for 30 mins (ish) untile golden
- Let them to cool
- Prepare the filling by melting the white chocolate
- Let it cool down a little then add the mascarpone cheese and mix well with a spatula.
- Put the instant coffee into a small cup, and pour one spoon of hot water on it.
- This will make some sort of “coffee paste” that you can now add to the cream.
- Mix well.
- Fill the Eclairs with this cream when they are at room temperature.
- Take a small bowl with the cocoa powder, add some water, warm, drop by drop and stirring very well untile you get a very thick chocolate “cream”
