Chicken & Baked Tomatoes PASTAin italiano

I’m not going to spend much words for this recipe, I just would love to tell you guys how much I loved it, so much. Using oven cooked tomatoes was a great idea and I added that extra spicy touch with the little pieces of crunchy hot chicken.

Please read on, try it and let me know if you loved it as much as I did.

INGREDIENTS

for 2 people

  • 180g of pasta
  • 200g of zucchini
  • 5 tomatoes
  • 200g of chicken breast
  • 5 tbs of extravirging olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 ts of chilli seeds

METHOD

  1. Pre-heat oven at 180°
  2. Dice the zucchini and place them on a baking pan lined with parchment paper.
  3. Bake for 10 minutes.
  4. Then add the tomato wedges and bake 10 extra minutes.
  5. In the meantime cut the chicken into little pieces, place them in a bowl with a 1 tablespoon of olive oil and a teaspoon of chilli seeds. Stir well.
  6. Cook the chicken pieces in a oiled pan. Till they are golden brown.
  7. Bring a pot of water to a boil and cook the pasta. Don’t forget the salt in the water!(see box for cooking time)
  8. When the pasta is ready and drained, put it back into the pot.
  9. Now add the baked tomatoes, the diced baked zucchini and the crunchy hot chicken.
  10. Give it all a final stir and serve.
