“INSALATA CON AVOCADO, POLLO, SEMI E RICOTTA”
I first had this salad in a well known Soho restaurant, London. I was there for dinner and didn’t feel like having something like a steak or a main course, spotted this salad in the menu and thought “Why not, sounds delicious!”.
And I was right.
Since then I made the same salad (well, more or less...) at home a few times. I really love it because it contains good proteins (chicken) good fats (avocado and seeds) and ricotta cheese makes it slighty creamy but, at the same time, the seeds are a good crunchy contrast.
INGREDIENTS
for 1 portion
- salad leaves
- 80g ricotta cheese
- 80g sliced avocado
- 150g grilled chicken breast
- 30g of crutons
- 1 tbs of mixed seeds (sunflower seeds, sesame seeds, pumpkin seeds)
METHOD
- Grill the chicken breast in a non-stick pan.
- Slice the avocado.
- Place avocado, ricotta cheese and grilled chicken breast with your salad leaves and sprinkle everything with the seeds.
- Add in the crutons.
Don’t look at the Kcal, look at the contents. It is tasty and healthy. You have carbs, proteins and taste most of all. Fantastic for a tasteful and good lunch.
