I’m so much into veggies. Any kind, really. I can have vegetables in great quantity every single day, I just need to change the way I prepare them, it makes it even better to have in so many different ways.
I had a piece of Feta Cheese in my fridge yesterday and thought about what I could do with it, since I coudn.’t keep it for too long, because I’ve noticed that feta cheese goes off kinda quickly.
I had a craving for broccoli, but also for something that looked differently…oh well, to cut a long story shor I dediced to make Broccoli & Feta Cheese Burgers and this is the recipe!
INGREDIENTS
- 250g of broccoli florets
- 50g of chopped onions
- 50g of chickpea flour
- 1/2 ts of ground black pepper
- 1 ts of sea salt
- 1 egg
- 70g of Feta Cheese, chopped
METHOD
- Place broccoli florets, onions and chickpea flour in a food processor and process for 2 minutes, no more.
- Place the mixture in a large bowl.
- Add in all the other ingredients and stir gently, trying to incorporate all the ingredients together.
- Do not overwaork this doungh, because we don’t want the feta cheese to get too soft and kind of melt.
- Pre-heat a non-stick pan and lightly grease it with some olive oil.
- Spoon the batter into the pan, 3 tablespoons each “burger”, and cook them for 4 minutes on each side, then again 3 minute on each side.
Done. So simple as usual. I process the raw broccoli because this gives a nice crunchyness to these patties.
